Just a guess here, but the carburized fuel coming through the jet hole into the intake is like a jet.
To re-jet is to change the hole size in the jet, either bigger hole or smaller. All the gas your bike drinks, it drinks through a tiny hole. It's a tiny hole in a brass fitting called a jet. If you look at your spark plug and the electrode is white, the motor wants more gas, you need a bigger jet. If your spark plug is black, your motor wants less gas, you need a smaller jet. "To jet" could also mean to fly or leave quickly, also a compact black coal. A free or submerged stream of liquid or gas, or small particulate forcefully shooting forth from a nozzle, orifice ect. Something that issues from such a stream eg, liquid or gas.
