If you just bought the carb, and it is the Mikuni VM26 variety... they are usually shipped with a 20 slow/pilot jet and a 100 main jet

Mikuni clone comes with 20 pilot and 100 main...as far a what you should change to depends on a lot of factors, the altitude you live at, modifications that you have done like exhaust or air filter etc,. I run with the stock pilot and a 115 main and I had to move the needle up one notch to lean the idle out a little. Each bike is different so you have to play around with it till you get the right set up.

For reference, I took the cat out of my header, NGK plug, opened airbox, and with the 20 pilot and 120 main, needle clip on the second notch from the top; it runs perfect. I have a 40 tooth rear sprocket and the highest I've hit so far is 62 mph (Verified by GPS and digital dash).

I would also suggest opening the carburetor to verify what jets you have. Lately some versions of the "Mikuni" have come with a pilot jet stamped as a "40", but as a member on here verified it's orifice size is closer to that of a 25 or 27.5 Mikuni VM28/486, meaning it is actually a Keihin 40 sized jet much like the stock carburetor.

As ARH stated, a list of modifications will go a long way as well.
