she is a cold natured witch

this hawk is very cold natured to get going. full choke and you still have to hold throttle open or it dies then after 3 minutes or so you can go to half choke but still have to give it a little throttle. takes 10 minutes to idle on its own without choke. is this just needing to adjust the hidden mixture screw.

You need to re jet or adjust your carb. What color is your spark plug? The bike should idle with choke if needed as soon as you start the bike. You should not need to use the choke for more then a few minuets.

All of what Merlin suggests are valuable suggestions. I would also check the head to carburetor nuts. If there is an air leak on the intake side, it could cause these problems.

Yes, mine were loose. all 4 carb to intake and intake to head, not sure that's what fixed it, but with the mixture screw turned out to 1.5 and the bolts tightened it idles a lot better and faster warm up.

Mine was the same way. Once I turned out the idle mixture screw 1 1/2 turns and shim the needle with 2 washers it starts and idles without the choke. It's been warm here. I sure once it gets cold I will need to choke it.

adjusting the valves may help as well. Most or possibly all Hawks have been delivered with tight valves...mine starts easier with the valves set to spec.
