I'm sure this will sound stupid, but what is loctite?

I'm guessing it's and adhesive to keep bolts from comming loose, but I've never used it. Is there more than one kind? What is the best kind to use on dirt bikes and were do you get it? Is it impossible to undo a bolt if you need to after you loctite it? Do you pretty much loctite every bolt you can find? What about screws do you loctite them also?

Yes loctite is used to secure fasteners that are subject to vibration and loosening.It is sold at every auto parts store.
There are different kinds of loctite just make sure to use the type that can be DISASSEMBLED and also I have found that loctite likes to destroy some plastics, be careful what you get it on and it tastes aweful (dont ask )

red is high strength/permanent, blue can be loosened with hand tools, there's an anti vibration formula, but I can't recall what color it is. and so far I've had the best luck with the actual Loc-Tite brand, the others just don't seem to work as well.

just a liquid you put on the threads. Many brands, but blue is what I use:

I've used both these ones with good results:

I have used green LOCTITE on my RC cars and it is made to go on already fastened parts just put a dab on and it runs into the threads although I dont think it works as well as the blue.
