Head Scratching CEL no codes, stalls while riding, DLX

So bike runs great other than it will randomly cut out and won't start for about a minute after it dies, then throws the CEL. I've tried the key stroke to pull a code but it doesn't flash, however if I wait another minute or so I can do a reset key stroke and clear the CEL. Even with the light on it will run thereafter. Seems to do it more at 3/4 throttle or high speeds. Valves have been adjusted 2 or 3x. Engine does seem to be extremely hot in my opinion so since have installed oil cooler and still happens to die.
Bike has almost 4k miles, well maintained. Anyone have any idears

If you are lucky, this is a loose wire/connector. It may also be a transiently failing sensor (like temp sensor).

Check/reset all of the connections that you can find/get to easily. Then dig deeper if needed.

If it keeps happening, and you can't get the code, you may end up replacing parts one by one. Transient failures are the worst.

Don't know if this will help. I had weird engine cut out issues with my Lifan KPR 200 and after hours of trying to find/figure it out I discovered a badly corroded battery terminal connection. 10 minutes of cleaning solved the problem and it has not returned since.

Also changed the plug and still nothing. Also learning that if I get into third gear and go WOT it will cut out and be rolling to a stop when it hits the high end. If I roll the throttle I can hear a noise difference like it's wanting fuel. My guess is the fuel delivery system, cam position sensor, or heat issue.
Where would I start or how would I go about checking, where's the sensors located.

Load test battery, check/clean battery connections and charging system.
