It's got a 120 main jet and a #40 pilot jet in there. I replaced pilot with #45, then backed off to #42. Now I think #45 might be better. I replaced the main with a #125, and also shimmed the needle ~1mm.

That stalling will go away once you get more rich fuel/air with jetting changes and needle shim. Look at the Templar resource guide for carb stuff

You will want to drill the airscrew cap next time you remove the carb. It is on the right side behind the slide height (idle) adjustment screw. And get a large knob idle adjustment screw while you are at it. All of this stuff is noted in the Templar resource.

Lots of other stuff there in the carb posts (how to get into the cxarb, etc). shmoto is still selling the jets. They fit perfect and pretty consistent jets. Price has gone up to $10 (shocking!).

Order them jets! Also, get in there and set the valve clearances ASAP.

I like the OEM YouAll Dan. It is a smoothbore and built well. You have to jet and set needle height on ANY carb. You will start over if you install the Nibbi (all carbs need jetting and adjustment!).

Either way, rejet will be needed and valve clearance needs attention ASAP. Fortunately, the valves are easy to adjust. The cable routing will work with either carb, so that's done!
