Typically, one litre of oil will take the level to the top line of the sight glass, which does not fully submerse the sight glass.

Absolutely, how much more will depend on the volume of the cooler and lines added. Hopefully it doesn't drain when the engine is stopped, that'll cause problems, but as long as it doesn't it'll be easy to check the level at the sight glass and get it right. You could fill the cooler and lines before installing it to know how much it holds and know how much extra you'll need to add. When you change the oil, assuming the cooler doesn't drain, you'll only refill with the original stock amount.
