Offset session this morning
Thanksgiving is still more than a week away. So I decided to get a few racks of baby back ribs through the offset this morning. I used black pepper and Szeged rib rub (overnight in the cold garage). They got ~3.5 hours in the smoker this morning (seasoned white oak splits, nice clean smoke), then painted them with rendered/smoked beef fat and wrapped them. They are softening up at ~150-200F now. Nearly done. YUUUMMM!
