Head Scratching Going bonkers! Icebear zodiac

OK, first things first let me explain the problem:
Several weeks ago my wife and I set out on a picture perfect late evening sunset ride. 2 miles down the road her Icebear Zodiac rolled to a hault.
It will sit there and idle perfect. The moment you give it virtually any throttle at all, it dies. So I had to tow it back home.
I was told "main jet stopped up". Sounds reasonable. So knowing I wanted a tuneable carb anyways, I ordered a new Klein CV carb copy. Installed new carb, exact same results. :-/
Then I was told by several people "replace the CDI !!! " So I did. NADA! Same results. Then I was told " replace this & this & that "
Long story shortened, It now has NEW carb, CDI, Ign. Coil, fuel pump, fuel lines (again) fuel filter (again), pulled and cleaned the NEW carb (just in case), new spark plug, new stator (thinking the ign. pickup thingy attached to the stator went bad. ), new vaccume lines (again), quadruple checked the intake boot & o-ring gasket.
NOTHING has made any difference. Starts right up...........idles PERFECT and will sit there at idle for 20 min and never skip a beat.
The second I roll on the throttle................it dies.
There is NOTHING left to replace! Like, nothing! I have spent over $300 trying to fix this ghost problem! If it had full coverage, it may have found it's way into the bottom of KY Lake! hahahahaha! ( I would never actually do that )
Anyone have any other clue or have ever had a problem like this before?
