Head Scratching Help! Bike dies on me mid drive

Hello! So I need some help from anyone that can spare some advice. I got a new exhaust and muffler for my hawk 250 and it was working great at first, but then out of nowhere the bike dies on me mid drive last night. I tried to start the bike back up and had to do full choke on my carb to get it to fire back on but only for a short amount of time before it shut off again. Luckily it was enough to get me back home but I noticed as I drove that it sounded like very loud popping coming from the muffler when I was decelerating. Any thoughts on what it could be and how I could fix it fast?

A freer-flowing pipe might have made the A/F ratio too lean. Motor overheats and shuts down. Cools off, starts again. Might have to re-jet the carb.

Also check valve clearances, especially the exhaust which gets hotter. Extra heat would make the valves tighter, so they never fully close and you get shutdown.

I’m still new so I’m still getting used to learning how to do all this. How would I re-jet the carb myself, and check the valve clearance? Are there any videos you would recommend for it?
