Templar M Stuttering

Hey guys, picked up a Templar M when they were on sale about 6 months ago. Since the weather has been picking up I have been riding it more often but have been having an odd issue that is really starting to get annoying. Whenever I try to maintain top speed/rpms on my templar after maybe 15-20 seconds I lose all power and have to back off the throttle to about 50mph then slowly start rolling on the power again and it will be fine. I'm pretty sure it must have something to do with the carb jetting since I live in the mountains of PA, 1700 ft above elevation. I'm going to give that a go soon but do you guys have any other ideas of what it may be? The reason I got the M is for the adjustable suspension, I have been riding for over 15 years and this is my first dirtbike and am having a blast plowing through trails.
