Carb Questions, SSR XF250x

I am trying to get my bike to run right after re jetting with the Sigma 6 kit.
My SSR is a 2023 and was stock. I'm at sea level. These bikes are set very lean for EPA, and my bike was hard to start without choke. It would die at idle or starting off in 1st until good and warmed up.
Drove nicely otherwise though.

I put the new 40 pilot jet in
Swapped the 128 stock main jet with 135
And added a shim/washer to the needle to raise it up a little.

This improved starting and idle greatly. I started the bike first try with no choke, and it would not die at idle or when starting off in 1st. I assumed mostly because of the 40 pilot jet allowing more fuel at these low RPMs.

Problem is, now the bike pops or sputters when letting off throttle in the 1/4 to 3/4 range.
It also started hesitating, lurching at 3/4 to Full/WOT.
I haven't done any of the airbox or muffler mods.
