BoomCat BD-125 fuel valves and carb

I received my BoomCat a couple of days ago and just finished assembling it today. There's a couple of minor issues; both the front and rear right directional lamp holders were broken and will need to be replaced. I'll have to replace the heel/toe shifter. I hate those. Otherwise the bike came out very nice.

The manual isn't too helpful on fuel supply. Why does the engine have two fuel valves and what position does the fuel switch have to be in to shut the flow off?

A few people have recommended that the carb on Boomcats should be replaced. Will this Amazon carb work? https://www.amazon.com/gp/product/B0...PN8SG12O&psc=1.
