Mount Adams is a fun hike.
Mount Saint Helens is also fun, if you go up before the snow melts.
Mount Hood is also fairly safe, as long as you take the 'dog route.' Mount Rainier is very technical; you need to cross a lot of glaciers. Mount Rainier kills several climbers every year.
