My chino bikes run pretty lean anyway. If you de-baffle the bike, it might cause it to be really lean, not a good thing. Not sure what sort of carb yours has, but the Walboro on my Diamo and Jincheng I can't get jets for. I guess you could rejet the redneck way, drill the jet and use wire inserts of different gauges to dial it in. Or, you could buy a Mikuni, or you could put a dial-a-jet on it. OR, you could put the baffle back in it....
