Personally, I would just do "gutentite" and maybe some loctite if I was worried. I think somewhere around 15 to 25 lb ft would be adequate and maybe too much.

I would do the valves again in a few hundred miles, after you feel like its mostly broken in. I don't know much about your engine, but I would do the oil much more often. Its so cheap...why not?

That main jet sounds wayyy huge. Any of the idle/choke issues are going to be related to the pilot jet. That's what you should be focusing on in my opinion.

I don't think that is really an issue as long as you can get the nuts tight. Try red loctite instead of blue. It will require heat to remove but will be a lot stronger.
