Venom Ghost 250(Dong Fang) top speed

Hey all. I need your opinions. So i have just over 500 miles on my 2021 Ghost. Stock i was able to get up to about 63 mph. So i installed a 36 tooth sprocket and a Nibbi Racing Carb with a performance air filter. The bike is definitely louder now and seems to have more pep, but now i can't get it to go over 60 mph. I haven't removed the Catylitic converter yet since it'll void the warranty. I'm just asking for your thoughts on what i can actually do to get more top end out of this thing. I'm not a mechanic so i can't really afford to take it to someone to boar it out and all that. I had a motorcycle shop do the carb and tune it up and that cost me quite a bit. I was really hoping I'd get more top end on it so i can take it on the highway comfortably.

It's also backfiring pretty bad. It's non-stop when throttling down.

Remove the cat. It's very restrictive. These engines loosen up around 1000 miles. I can hit 70 mph. Fastest I've gotten it up to is 73 mph.

I get a good bit of decel pop but I think that's because of the muffler design and not so much tuning. I know I have my carb dialed in pretty good.

Got it up to 74 today, but it's still hit and miss. Sometimes it runs great and sometimes it doesn't want to go over 55. Kinda off topic, but how far can you go on a full tank?

On the highways near me I can take it about ~130 miles before I refill. I've gotten my bike up to 74 as well and it holds around 65 with 36 tooth sprocket, rejet, and custom exhaust, but in heavy wind it drops down to around 55. I might throw on a 28mm nibbi and 4 degree flywheel key and some performance ignition stuff before I crack open the engine for a cam and piston.
